Lately













I have been more inspired by food and cooking than anything else the past few weeks.. I have been, quote from Meredith Cox, "quite the Martha Stewart" lately! So here are a few things I've made.. The first picture is a super healthy and delicious banana ice cream. So simple! Mash one banana and add one tsp coconut oil and freeze for two hours. I topped it with a few almonds for some crunch. The second picture is a cauliflower pizza crust made with 1/2 cauliflower, made into meal, boiled, drained and squeezed and then I added one egg and some oregano. Put it in the oven (200C) for 30 minutes and then add the toppings and put it in the oven for an additional 15 minutes or so. The third picture is just me and a coconut - those things are harder to crack than I thought! The next picture is my lovely weekend breakfast - nothing beats fresh berries Greek yogurt, chia seeds, cottage cheese etc. Then we have my amazing protein pancakes (1/2 c oatmeal, 5 egg whites, cinnamon, flaxseeds) topped with 1 scoop of chocolate protein mixed in water, kiwi and blueberries! The last picture is just scrambled egg whites and spinach with one grapefruit and one slice of gluten free cinnamon/raisin bread (homemade)!
